Teriyaki Chicken by Tracy

6-8 boneless, skinless chicken breasts
2 gloves garlic, minced
1 cup soy sauce
1 cup sugar
1/4 cup water
3 tbsp. orange juice
3 green onions, chopped
grated ginger root (optional) (I didn't add this in my Grub Club meal)
Combine everything in a big bowl (except the chicken) and stir well. Add chicken and let it marinade in the fridge over night (the longer the better). This chicken is really yummy cooked on the grill or cooked at a medium heat (350*) in the oven.

Orange Chicken Stir Fry by Tracy

1 cup orange juice
1 tablespoon grated orange zest
1/4 cup soy sauce
1 teaspoon salt
3 cloves garlic, chopped
1 tablespoon brown sugar
3 tablespoons vegetable oil
4 skinless, boneless chicken breast halves - cut into 1 inch cubes
2 tablespoons all-purpose flour
1 1/2-2 cups of frozen vegetables (your choice)
1 (6 ounce) package crispy chow mein noodles

In a small bowl combine the orange juice, orange zest, soy sauce, salt, garlic and brown sugar. Mix well.
Heat oil in a large skillet or wok over medium high heat. When oil begins to bubble, add chicken. Saute until cooked through (no longer pink inside), about 7 to 10 minutes.
Add frozen vegetables and to chicken and continue cooking until vegetables are slightly tender. Add orange sauce mixture to chicken and cook until sauce begins to bubble. Add flour, a little bit at a time, until sauce has thickened to your liking. Serve hot over chow mein noodles.

Death by Chocolate Cookies Mix in a Jar by Tracy

2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 cup unsweetened cocoa powder
1 1/2 cups sugar
1 cup chocolate chips
Beginning with the flour, layer these ingredients in the jar.
Attach the following recipe:
1 1/4 cup butter, softened
2 eggs
1 tsp. vanilla
contents of jar
Preheat the oven to 350*. In a large bowl, cream the butter, eggs and vanilla. Add contents of jar and stir until well mixed. Bake on ungreased cookie sheet for 8-10 min. Cool and enjoy.
Makes 3 dozen.

Almond Joy Brownie Mix By Candria

Layer in quart size jar:
2 1/4 cups sugar
1/2 cup cocoa powder
1 1/4 cups flaked coconut sprinkled with
1 tsp. almond extract
3/4 cup coarsely chopped whole almonds
1 1/4 cups flour mixed with
1 tsp. baking powder and
1 tsp. salt

Empty mix into a large mixing bowl and mix well. Add 3/4 cup melted butter and 4 eggs. Mix until completely blended. Spread into a greased 9 x 13 pan. Bake at 350 for 30 minutes or until edges start to pull away from pan. Cool completely before cutting. Enjoy!

Cheryl's Chicken Pot Pie By Candria

This recipe comes from my great neighbor, Cheryl, who shared it with me, and is letting me share it with you!

1 bag frozen mixed vegetables
1 can cream of mushroom soup
1 can cream of chicken soup
3 chicken breasts, cooked and chopped

1 cube butter, softened
1 cup flour
1 cup milk

Mix veggies, soups, and chicken in a 9 x 13 pan. Beat butter, flour, and milk until well blended and pour on top of veg. mixture. Bake uncovered at 400 for 1 hour or until crust is golden brown. Enjoy!

Recipes from Peggy:
Rocky Road Brownies: Mix
1 cup sugar
1 cup choc chips 1/2 cup chopped walnusts
1/2 cup flour
1/2 cup cocoa
1 cup mini marshmallows
add to mix: all but marshmallows
1 1/2 cups melted butter
1/4 cup buttermilk
1 egg
1 teas. vanilla
bake at 350* in lightly oiled 8X8 pan. Bake
25 to 30 minutes. remove and add marshmallows to top.
bake additional 2 to 3 minutes. cool. cut. enjoy!

Taco Soup
1 pd. ground beef
1 can each:
kidney beans
chili beans
black beans
corn
onion
pkg. taco seasoning mix
pkg. ranch dressing mix
2 cans chopped tomatoes
brown hamburger
saute onion in hamburger
add all ingredients together in crock pot
cook on low about 4 hours. Serve over tortilla chips, add
grated cheese and sour cream to top

Peanut Butter Cookies

2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups brown sugar
1 1/4 cups sugar
1 cup shortening
3 eggs
1 cup creamy peanut butter
2 teaspoons vanilla

In a large bowl, blend sugars & shortening. Add eggs, peanut butter, & vanilla & blend again. Add baking soda, salt, & add flour gradually while blending. Blend until just mixed (don't overmix.) Roll balls of cookie dough in sugar & place on a greased cookie sheet. Press down with a wet fork in a crisscross pattern. Bake for 18-22 min at 300 degrees. (Some ovens vary, mine were done after only 15 min.) You can also add chocolate chips if desired.

Broccoli Soup

2 cups brocolli
1 1/2 cups chicken broth
1/2 cup chopped onion
1/2 teaspoon thyme
1 bay leaf
Dash of garlic powder
2 T butter
2 T flour
1/2 teaspoon salt
1 cup milk

In a saucepan combine chicken broth, onion, thyme, bay leaf, & garlic powder. Bring mixture to boiling. Reduce heat; cover & simmer for 10 min. Remove the bay leaf. Place mixture in blender (you will have to do this a couple of times because it all won't fit in the blender at once.) Blend until smooth & pour into a large bowl. In the same saucepan, melt butter, then blend in the flour & salt. Add milk. Cook & stir until the mixture is thick & bubbly. Stir in the vegetable mixture. Cook & stir until heated. Season with salt & pepper. Serve in bread bowls if desired & top w/cheese.

Sweet & Sour Chicken

4 boneless skinless chicken breast halves
1T oil
1 carrot sliced
1 clove garlic, minced
1 cup sugar
4 T cornstarch
1 1/3 cups water
3 T oil
2/3 cup vinegar
4 T soy sauce
1 onion, chunked
1/2 red bell pepper, chunked
1/2 green bell pepper, chunked
1 small can pineapple chunks

Cut chicken in 1 inch cubes. Saute in oil with carrot and garlic until no longer pink. Remove from heat & allow to cool. Meanwhile, combine sugar & cornstarch in saucepan. Stir in water. Add oil, vinegar, & soy sauce. Cook and stir until thick & clear. (Keep stirring or it will burn on the bottom of the pan.) Add in the chicken, sauce, vegetables & pineapple. If freezing, allow to cool before stirring in vegetables. Otherwise, continue cooking until vegetables are as soft/crunchy as you would like them. Serve with rice.

White Chocalate Macadamia Nut Cookies

1 C shortening
2 C brown sugar
1 c white sugar
3 t. baking soda
1 tsp salt
5 eggs
2 T vanilla
5C flour Macadamia nuts and white chocolate chips
Bake at 350 for 10 min.

Chicken Rice Burritos by Candace

1/3 c green onions
1 garlic clove
2 T butter Saute onion and garlic in butter
Then put in crock pot with:
7 cups cooked shredded chicken
1.5 tsp chili powder
3 cups chicken broth
1 c uncooked rice1 jar
16 oz salsa
1-2 cans black beans
Cook till rice is cooked, then wrap in tortilla with cheese. Can also wrap in foil and put in oven at 400 for 10 min.Serve with salsa, sour cream guacamole.

Saint Fe Soup by Alayna via Candria

I totally stole this from my dear Candria, but it is just so dang yummy!


1 can Chile beans
1 can kidney beans
1 can black beans
drain and place in crock pot

1 can diced tomatoes with Green chilies
1 can stewed tomatoes
4 oz Velveeta
1 lb hamburger cooked

dump into crock pot with beans
cook on low until heated through.

Optional add 1 c grated cheese at the end of cooking.
Can be served with chips.
